One-Pot Mac and Cheese
If you seek an easy supper dish made literally in one pot then this is the recipe for you. Perfect for all pasta lovers who crave Mac and Cheese but seek a quicker recipe and with only one main pot to wash!
Serves 4
Preparation time: 20 minutes
Stovetop cooking: 40 minutes
INGREDIENTS
Water – just enough to cover the pasta in the pot
250 g Penne pasta
1 head of broccoli – chopped
185 ml whole milk
1 large leek – cleaned and sliced
3 tbsp Greek yoghurt
Cheeses
250 g strong cheddar cheese – grated
250 g red Leicester cheese – grated
Seasonings
1 tsp onion powder
1 tsp paprika
1 tbsp dijon mustard
Pinch of cayenne pepper – optional
Sea salt – to taste
Plenty of ground black pepper
INSTRUCTIONS
Place pasta into a cooking pot. Add enough cold water to cover.
Bring to a boil and simmer until tender. Now add the broccoli and sliced leek.
Add milk and Greek yoghurt. Add cheeses. Add seasonings.
Cook until pasta is ready and cheese has all melted. Stir well.
Serve
Dish up hot into large attractive bowls garnished with a generous grind of black pepper, extra cheese or your favourite spicy sauce.
Jules Tips: I used penne pasta in this recipe, however, any shape of short cut dried pasta can be used and if the end result is too thick and dry, add a little extra water or milk.
